Vincent Dancer set up his domaine in the lower part of Chassagne-Montrachet in 1996 and has now been joined by his son Théo. He owes many of his holdings to the Lochardet inheritance, hence the fact that he shares many vineyards with Domaines Ballot-Millot and Heitz-Lochardet. His vineyards have been certified organic from 2012, while new plantings are at high density, with higher training as well.
Vincent’s technique in the cellar is to crush the grapes then give them a long slow pneumatic press and to vinify without settling and without sulphur using hardly any new wood: just 10% and then only if the cuvée consists of 10 or more barrels. Vincent uses no new wood for his red wines, no temperature control, no stems and no pumping over, just an occasional punch down. The wines will have sulphur levels adjusted when they are racked a month before bottling.
Thus, whether in the vines or the cellar, Vincent Dancer clearly chooses his own course. The wines were not always consistent in his early years, but now are very much sought after.
