Domaine Lamy-Pillot

Updated Sep 2022

The Lamy of the title is René Lamy, brother of Hubert in St-Aubin, but the Pillot part of the name is no relation to the other Chassagne Pillots. René Lamy worked for the Duc de Magenta while developing his own domaine alongside, leaving the Duc to concentrate entirely on his own estate in 1973. The domaine is now run by sons-in-law Sébastien Caillat and Daniel Cadot-Lamy. Sébastien and his wife Florence are primarily responsible on the production side. They have actually cut back from 21 hectares to a more manageable 15ha, which they run mostly organically except around the sensitive time of the flowering.

The domaine makes sound, conventional whites – that is not meant to be as dismissive as it sounds, but the point is to make the contrast with what Sébastien is doing with his own small Domaine Lamy-Caillat – and some fascinating old school reds for which they have an avid private clientele. The grapes are destemmed, and spend a month in the fermenting vats being punched down twice a day for the first ten days. This makes for solid hefty pinots which need a considerable time to mature, gaining elegance along the way. I was particularly taken by a 2007 Chassagne Clos St-Jean rouge tasted in 2019 at the domaine. Note however that Sébastien is now experimenting with whole bunch vinification.

The whites, apart from the Montrachet, which they have as a sharecropping agreement with owner Claudine Petitjean, are bottled before the next harvest.
