The domaine created by Jean-Claude and Christiane Oudin in Chichée is now in the hands of daughters Nathalie and Isabelle. A sound address has become a very good one, helped by good plant material at the outset. A third of their ten hectares is from old massal selection vines while the rest was planted by their parents 35 to 40 years ago. All the vines, not just the premiers crus Vaucoupins and Vaugiraut, are situated in the Chichée sector. The grapes are picked by machine but fermented with indigenous yeasts. In addition to a straight Chablis there is a cuvée called Les Serres which comes from old vines and is given up to 24 months ageing in stainless steel before bottling, to offer extra weight and depth of flavour.
