2016 was the first vintage for this new venture which in fact assembles the vineyards of Pascal Bouchard plus those of Romain Bouchard, in a smart new location on the Rue de Chichée. Romain and his brother Damien are in charge. The marque and négociant business of Pascal Bouchard was sold to Albert Bichot in Beaune in 2015.
Romain and Damien have renovated substantial premises in the southern quarter of Chablis. The vineyards are now organic, with certification from 2018. They like to pick ripe grapes, beginning the 2017 harvest on 14th September, nearly two weeks after Benoît Droin or William Fèvre, for example. The 1ers crus, excepting Beauroy and Vau de Vey, are vinified half in barrel and half in tank, then matured in barrels of four to five years old.
