Flinty reduction melds with judicious cedar and white peach to start before cashew cream, pastry dough, Meyer lemon and baked apples. It’s rich and layered though with lovely control and precision aromatically. Similarly, the palate is at once freshly fruited and textural. Peach flesh, preserved lemon, cracked wheat, cashew, yellow apple and baker’s dough are quickly guillotined by a cut of pithy acidity and lemon rind phenolics which frame it up for a long, attractively bitter and savoury finish. There’s a lot going on here, and it’s been so masterfully crafted by undeniably deft hands.
